Fillets are sold in threes. This is a natural product, so size, shape, thickness and colour vary from piece to piece on average the are 7cm. Colour ranges from deep reddish brown through to warm chestnut, with paler golden flecks and more amber tones around the thinner edges. That variation is completely normal and a sign that nothing has been processed or standardised.
